- 1/2 Tbsp. olive oil
- 2 chicken breasts (500g)
- 75 grams shiitake mushrooms (thinly sliced)
- 1 vegetable stock (pot or stock cube)
- 1 liter water (boiled)
- 1 lemongrass stalk
- 1 star anise
- 2 kaffir lime leaves
- 1 bay leaf
- 1 red chilli
- 2 cms ginger (piece, peeled and finely chopped)
- 6 asparagus (halved length ways and halved again across the middle)
- 1 Tbsp. light soy sauce
- 1 tsp. fish sauce
- 1 tsp. shrimp paste
- 1/2 lime (Juice of)
- 6 baby corn (65g halved length ways)
- 1 bunch leaves (pak choi, 100g)
- 150 grams egg noodles (straight to wok)
- cashew nuts (Handful chopped)
- 1 bunch fresh mint leaves
- 1 bunch coriander leaves (fresh)
- 1 wedge lime
- chilli (Fresh, sliced into circle)
- boiled eggs (Runny yolk, shelled and halved)
