- 1 carrot (cut roughly into 2cm pieces)
- 1/2 leek (cut roughly into 2cm pieces)
- 2 sticks celery (cut roughly into 2cm pieces)
- 1 onion (cut roughly into 2cm pieces)
- 1 clove garlic (peeled and crushed)
- 1 tsp. coriander seeds
- 2 bay leafs
- 1 sprig thyme (large)
- 1.5 liters water

- freshly cracked black pepper
- 6 chicken (inner-fillets or one chicken breast)
- 4 shiitake mushrooms (sliced)
- 200 grams fresh udon noodles (or noodles of your choice)
- 4 spears purple sprouting broccoli (cut in half length ways)
