- 2 skinless chicken breasts
- 250 grams brown rice noodles (see note)
- 2 mangoes (green, cut into julienne on a mandolin)
- 150 grams daikon (cut into julienne on a mandolin)
- 1 cup bean sprouts (loosely packed)
- 2 shallots (thinly sliced on a mandolin)
- 2 cups herbs (loosely packed soft, such as mint, thai basil and coriander)
- roasted cashew nuts (Coarsely chopped, to serve)
- 100 mL lime juice (plus finely grated rind of 1 lime)
- 40 grams roasted cashew nuts
- 20 grams fresh turmeric (coarsely chopped)
- 4 lime leaves (makrut, stems removed, torn)
- 3 chillies (birdseye, or to taste)
- 3 garlic cloves
- 2 Tbsp. fish sauce (each, and coconut sugar)
