  • 250 grams brown rice noodles (see note)
  • 2 mangoes (green, cut into julienne on a mandolin)
  • 150 grams daikon (cut into julienne on a mandolin)
  • 1 cup bean sprouts (loosely packed)
  • 2 shallots (thinly sliced on a mandolin)
  • 2 cups herbs (loosely packed soft, such as mint, thai basil and coriander)
  • roasted cashew nuts (Coarsely chopped, to serve)
  • 100 milliliters lime juice (plus finely grated rind of 1 lime)
  • 40 grams roasted cashew nuts
  • 20 grams fresh turmeric (coarsely chopped)
  • 4 lime leaves (makrut, stems removed, torn)
  • 3 chillies (birdseye, or to taste)
  • 3 garlic cloves
  • 2 tablespoons fish sauce (each, and coconut sugar)
