- 1 1/4 lb. ground chicken (I used ground chicken thighs)
- 1 cup cooked white rice (cooled to room temp or colder)
- 1 large egg
- 1 small onion (grated)
- 1 garlic clove (pressed)
- 1/2 tsp. salt (I used sea salt)
- 1/4 tsp. pepper
- 1/2 cup flour (for dredging)
- 2 Tbsp. oil (I used extra LIGHT olive oil)
- 2 Tbsp. butter
- 2 Tbsp. flour
- 2 cups reduced sodium chicken broth
- 1/4 cup sour cream (or greek yogurt, or heavy cream)
- 1 tsp. paprika (more if you like a little spice in your life)
- salt
- pepper
- freshly chopped parsley (for garnish, optional)

After reading reviews that this was bland, I made it with double the onion and maybe triple the amount of paprika. I chopped dill and added it to the sauce instead of just a garnish. It was DELICIOUS! Perfect cold weather meal and so filling! My husband is already asking when I’m going to make this again and I can’t wait!
Edit: After 2 years, this is now a cold weather staple in our home, loved by the whole family. Sometimes I make substitutions but one thing I never leave out is the dill at the end...really brings it together!

My husband liked it.....but I found it far too bland. IF I make it again...and that is a big IF....I will definitely “doctor it up”. Needs more spices. I am one of those people that always follow a recipe for the first time, before adding my own touches. This one definitely needs more touches.

Turned out great! My hubby was concerned that the rice in the meatballs would spoil the dish but he's converted after trying them. The meatball mixture is very soft and wet and therefore needs gentle handling when forming the balls (using a small ice cream scoop makes this job a lot easier though) but they firm up well when cooked. I made the meatballs ahead of time and then just left them in the sauce to warm through whilst waiting for the mashed potatoes to be done.
We're going to try this with beef mince next time as my hubby thought the sauce a little too rich for the meatballs.
