- 8 oz. Massaman curry paste (about ½ cup)
- 12 oz. wheat beer (Belgian-style)
- 14 oz. unsweetened coconut milk
- 3/4 cup low sodium chicken stock
- 3 Tbsp. fish sauce
- 2 1/2 Tbsp. light brown sugar (or palm)
- 2 star anise (pods)
- 1 cinnamon stick
- 10 boneless skinless chicken thighs (cut into large chunks, about 3 lb., 1.5kg)
- 1 1/2 lb. red skin potatoes (or Yukon Gold, cut into large chunks)
- 1/2 cup unsalted peanuts (roasted)
- 3 Tbsp. fresh lime juice (about 2 limes, more lime for garnish)
- 1 cup cilantro (lightly packed leaves and tender stems, for garnish, optional)
