Tasty dish. Used coconut cream instead of coconut milk and diluted it a little with more stock.

It turned out great! I couldn’t find any Massaman paste in the grocery store. So I used Madras curry, which is an Indian curry and changed the flavour significantly I’m sure. I’m going to make it again using a red curry if I can’t find the Massaman curry somewhere else. The sweet potatoes, lemon grass, and using chicken thighs over breast in this recipe were the highlights in this dish for me.

great i love it plan to add some broccoli bok choy pineapple and red pepper for more veggies and color
