Good!
I substituted potato starch for flour and pancetta for Prosciutto (TJ’s - it’s what I had).
I would omit the salt and salt when eating. 1tsp of salt, even though in the dredging seemed a bit much for our taste.
The Shiitakes were wonderful. We will absolutely make this again.
