- 2 Tbsp. rice vinegar (seasoned or unseasoned)
- 2 Tbsp. sesame oil (chili, use regular sesame oil if you want to make a less spicy dish)
- 2 Tbsp. creamy peanut butter
- 1 Tbsp. honey
- 3 Tbsp. chili garlic sauce (depending on how spicy you like your lettuce wraps)
- 1 Tbsp. extra virgin olive oil
- 1 yellow onion (peeled and diced)
- 2 cloves garlic (diced)
- 1 Tbsp. fresh ginger (grated or minced)
- 1/2 tsp. salt
- 1/2 tsp ground pepper
- 1 tsp. seasoning (Thai, optional)
- 6 pieces chicken thighs (cooked Cajun, meat removed from the bone and cut into very small pieces, see note for other options)
- 8 oz. water chestnuts (diced)
- 1 bunch green onions (white and light green parts sliced thin)
- 1 cup salted peanuts (roasted)
- romaine lettuce leaves (Large, plan on 3 per person)
