  • 2 tablespoons olive oil
  • 2 slices bacon (chopped)
  • 1 onion (chopped)
  • 10 1/2 ounces rotisserie chicken (chopped)
  • 5 ounces roasted vegetables (chopped)
  • 2 1/2 ounces frozen peas
  • 2 eggs (beaten)
  • 4 sheets frozen puff pastry (thawed, edges rounded)
  • 1 tablespoon milk

    Directions

    1. Preheat oven to 350°F. Lightly grease 2 baking trays.
    2. Heat oil in a small frying pan over high heat. Sauté bacon and onion for 3-4 mins, until onion is tender. Transfer to a bowl and mix with chicken, vegetables and 1 egg. Season.
    3. Distribute filling between centers of puff pastry sheets then fold over into semicircles to enclose. Crimp edges with a fork to seal. Whisk together remaining egg and milk then brush over top. Arrange on prepared trays and bake for 25-30 mins, until puffed and golden brown.
    4. Serve with salad and tomato sauce.
