- 1/2 lb. noodles (fresh package of Sa-Ho Fun, or ¾ bag of Dried Rice Noodles, I used the fresh kind)
- 1 lb. chicken (cubed)
- 1 cup shanghai bok choy (diced and blanched)
- 2 dried shitake mushrooms (softened, diced)
- 1 carrot (small, diced)
- 2 cloves garlic (minced)
- 1/2 Tbsp. ginger (minced)
- 1 Tbsp. black beans (dried fermented/preserved)
- 1/2 finely chopped green onion
- oil (for frying, I used olive oil)
- 2 tsp. corn starch (omit if low carb)
- 1 Tbsp. soy sauce (can substitute with coconut aminos or tamari)
- 1 tsp. brown sugar (can substitute with coconut sugar)
- 1 tsp. fish sauce
- 1/2 tsp. sesame oil
- 1/2 tsp. black pepper
- 1/2 tsp. Chinese cooking wine
- 1 Tbsp. corn starch (or potato starch)
- 1 Tbsp. oyster sauce
- 1 tsp. soy sauce (can substitute with coconut aminos or tamari)
- 1 tsp. fish sauce
- 1 tsp. black beans (dried fermented/preserved)
- 1 tsp. brown sugar (or sugar, I used brown sugar)
- 1/2 tsp. dark soy sauce (can substitute with coconut aminos or tamari)
- 1/2 tsp. sesame oil
- 1/2 tsp. white pepper
- 1/2 tsp. Chinese cooking wine
- salt
- pepper
- 1/4 cup water (and reserve another ½ cup water to thin out the sauce)
