I lit mine on fire before serving by drizzling 151 rum over the chicken and veggies in a cast iron skillet. It added additional flavor. Delicious recipe just as written.

Fantastic five-star flavor! However, I upped the amounts and types of spices a bit, adding some smoked paprika and chipotle chile powder.

Cooked a spin on this one with small pack chicken thighs, 2 bell peppers, chorizo, one onion. Covered chicken lightly with AP. Refrigerated 1/2 hour. Took out-let rest 1/2 hour.
Skillet cooked chicken slowly medium heat and chorizo in separate skillet. Chicken to healthy temp, then added a small sprinkle of fajita powder, added peppers and onion, and chorizo cooking to sizzle then simmer. Served hot on plate-no tortillas——-eat right off plate———excellent dish cost less than 10 bucks and made plenty for 2 large men or reasonable meal for 4 folks.

Super easy recipe to follow. I didn’t have a jalapeño pepper so I added crushed red peppers to the marinade. Overall, this is a very tasty recipe. My one complaint is the mess it made cooking. Even with a spatter shield, I have to completely clean my stovetop and surrounding area. Oh well, the price we pay for good food, right? Bon Appetite!

Delicious! I used the marinade recipe and followed the instructions for the meat. The chicken was sooo tender and tasty. I cook quite a bit and this was a stand out. I had bought some fajita sauce so I added about a 1/2 c of it to the cooked veggies and meat. The seasoning of the meat and the tenderness were no doubt from the marinade. I will definitely be making this again.

is a keeper. I’ve made it twice. both times with chicken tenders. Chicken was so moist and vegs were crispy and yummy.

Used chicken tenders and used cilantro paste in marinade. Will update later. Didn’t use jalapeño served with yellow rice. Delicious. Will definitely make again.

We do this on the grill. Add some Cayene and extra jalepeno for more heat if thats your thing! One of our favorite recipes

Hubby really enjoyed this especially the leftovers for his lunch over salad greens topped with some sour cream. Did find the need so up the spice measurements for our liking.
