A good idea that I'll try again, but only after significant revisions. Chicken flavor is good, but doesn't need the sugar thanks to the peppers & onions already being sweet. Wish I'd skipped it.
I do not recommend using cream cheese in the macaroni as it tastes and feels gross with the chicken. The flavors and textures do not match. -I'd suggest using a cheese that you frequently add to your fajitas instead.
Also, why this recipe calls for so much butter for a simple rue-based cheese sauce is beyond me. I can't imagine putting that much butter in 2 cups of cheese sauce. Nasty. (I used 2 tbsp butter + 3 tbsp flour, and as always, it turned out perfectly. ... until i added the cream cheese and ruined the flavor.)
