I made this recipe, but since I was making enough for 72 servings I modified it. I used fresh red and green bell peppers as well as fresh onions. I cut these into strips and tossed them with olive oil and roasted before putting them in the recipe. I also decided after I'd made it that next time I will not add my chicken to the bean mixture. I will try adding the chicken after I layer the bean mixture.
