- 2 cups chicken stock (Low FODMAP, either homemade or purchased)
- 14.5 oz. diced tomatoes
- 1/2 tsp. cumin
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1 1/2 lb. boneless, skinless chicken breasts (pounded to 1/2 inch, 12 mm thick, then diced)
- 1/4 tsp. chilli powder (ground red serrano chillis or more to taste)
- 1/4 tsp. cumin (or more to taste)
- 1/4 tsp. oregano (or more to taste)
- 1/4 tsp. kosher salt
- freshly ground black pepper
- 2 tsp. garlic (EITHER Low FODMAP, Infused Oil or Onion-Infused Oil, made with vegetable oil, or purchased equivalent)
- 4 oz. green chilles (minced fresh, such as serrano)
- 4 oz. extra sharp cheddar (or sharp, grated, about 1 cup)
- 4 oz. havarti (grated, about 1 cup)
- 10 corn tortillas
- 7 oz. feta (about 11/4 cup)
- 1/4 cup chopped cilantro
- 1/4 cup scallions (chopped, green parts only)
