- 1 poblano chili pepper (large, stem removed and cut in half the long way)
- 1 dried pasilla chile peppers
- 6 cloves garlic (skin left on)
- 2 Tbsp. extra virgin olive oil
- 1 cup yellow onion (diced)
- 1 Tbsp. fresh garlic (coarsely chopped)
- 6 oz. tomato paste
- 10 oz. diced tomatoes with green chilies (Ro*Tel)
- 1 tsp. smoked paprika
- 2 tsp. ground cumin
- 2 tsp. chili powder
- 1 tsp. dried oregano
- 1 tsp. ground coriander
- 1 cup masa harina
- corn tortillas (cut into strips, for garnish, optional)
- vegetable oil (to fry corn tortilla strips)

Really fantastic! The secret is the broth. Don’t cut corners and it’s best done a day in advance. Thought about adding black beans and corn...maybe next time.
