- 1 chicken breast (cooked and shredded, rotisserie chicken or slow-cooked chicken will work great!)
- 1 can black beans (drained and rinsed)
- 1 cup yellow corn (frozen, thawed)
- 2 Tbsp. taco seasoning
- 1 1/2 cups mexican blend cheese (shredded, cheddar or jack cheese would work well too)
- 1/3 cup cilantro (roughly chopped)

Sounds good...have a similar recipe which cooks all the same ingredients in a slow cooker. The slow cooker recipe calls for 2 uncooked chicken breasts. Both are easy and very good.
