  • 1 chicken breast (cooked and shredded, rotisserie chicken or slow-cooked chicken will work great!)
  • 1 can black beans (drained and rinsed)
  • 1 cup yellow corn (frozen, thawed)
  • 2 tablespoons taco seasoning
  • 1 1/2 cups mexican blend cheese (shredded, cheddar or jack cheese would work well too)

    Sounds good...have a similar recipe which cooks all the same ingredients in a slow cooker. The slow cooker recipe calls for 2 uncooked chicken breasts. Both are easy and very good.
