The whole family loved it. Really easy and delicious. All I had was cheddar cheese and it turned out great.

Awesome recipe! I added a layer of thin zucchini, used slow cooked chicken with onions from a previous meal, homemade enchilada sauce, and Trader Joe’s wheat-corn tortillas. Doubled the recipe and it make 7 big servings!

OK. Kind of bland. Next time I will add more seasonings to the chicken and may add some red or green onion, and a little more cheese. Oh, and fresh cilantro!

This is good. Nothing spectacular, but a nice, easy family meal. I do think baking the chicken breasts in the oven with some seasoning is better than boiling it.

My family loved it I did add a little cumin, crushed red pepper and granulated garlic to my water when I boiled the chicken.

Super easy and delicious. I used a shredded Mexican cheese package, rotisserie chicken and served with a side of sliced avocados with a little olive oil and sea salt.

This was so good! I didn’t read the directions like I should have and made three layers. It had to cook longer but turned out great! My husband loved it too.

I added jalapenos and sweet corn to this recipe. Really easy to make and turned out delicious.

This was really good. I had cooked chicken breasts in the crockpot with a chicken taco seasoning and some chicken broth for soft tacos, and my family didn’t eat much of it. So I had about 1 1/2 lbs. seasoned chicken leftover, which worked perfectly for this recipe. I used a 9 x 13 pan since I had extra chicken than what the recipe called for. I still only used 6 tortillas, but 8 or so would have probably been better for coverage in the pan. I used mild enchilada sauce and sharp cheddar cheese, and topped my portion with salsa and jalapeños. My husband used sour cream. I definitely think it would have been bland if the chicken hadn’t been seasoned. Will definitely make again due to ease of recipe.

I followed the advice of other reviews and seasoned the chicken and grilled (not boiled) it. I used 2 tbsp of reduced sodium taco seasoning. Subbed black beans for refried beans (just because I had on hand). Added a can of corn and green chilies. I think without the seasoning on the chicken I would have rated it lower. The number of ingredients and ease of assembly make it a great addition to the rotation.

delicious , the mixture of those ingredients was the bomb.com oh btw i added a little bitnof cumin powder n chili powder to my beans (a pinch) turned out amazing

We're not big on beans, so I replaced it with corn. Thinking about it now, it might have been better to add mushrooms for texture. I also used red and green enchilada sauce in alternating layers since my sister doesn't like spice that much. Anyway, the dish turned out quite lovely, although the taste was certainly better after letting it sit for a few hours after baking and allowing the sauce to seep further into the tortilla. Next time I make this, I'll probably use chicken stock or add herbs when boiling the chicken to add more flavor.

Amazing flavours that everyone loved. I used pre cooked chicken and shredded this. I also added onion, capsicum and corn for extra veggies! Yummy

Really tasty! Used corn tortillas and topped with cilantro & avocado. I’ll probably add some black beans and/or corn next time.

Just made this today and it was a hit with my family. I made just a few changes. Used two pounds of chicken breast; 1) because that's what came out of the freezer, and 2) on Weight Watchers (which I follow), boneless, skinless breasts are ZERO Smart Points. This helped to increase the protein content and make it more filling. I used an entire 29 oz. can of enchilada sauce so that I wouldn't have to deal with leftover sauce. I also heated the refried beans in the microwave to make them easier to spread without disturbing the tortillas. I used ten tortillas, cutting two of them into fourths so that they would fit in the corners easier. I used a 13 x 10 baking dish and DID NOT put oil on the foil. Because there was so much chicken, I considered the recipe 12 servings instead of 10. If you follow WW, a serving is approximately 8 Smart Points. I will definitely be making this again because it was quick, easy, tasty, and filling!

This recipe was so easy I didn’t think it would have much flavor...I was wrong!! It’s delicious and easy for a week night dinner! I will definitely make it again!

A couple of issues with this recipe. It’s 11 290 calorie servings, but only 1 pound of chicken. How many are actually eating that size? Also, for 290 calories, you get 41% if your daily sodium, which is very high. Good idea but I’ll try it with double the chicken, homemade refried beans and enchilada sauce, and less cheese.

Very good, easy to make. Served with chips. Next time I’ll probably add green chili’s to spice it up.
