    It turned out really good. My son who doesn't like enchiladas loved it. Really easy to make.

    New family favourite for sure. I don't know that I've ever seen my husband go back for thirds of something before. I added a can of black beans and used Flatout low carb/high protein wraps instead of tortillas. There's so much going on in this dish that you really can use whatever tortillas you want and you probably wouldn't notice. The black beans are, in my mind, an essential addition, though. They add a lot (this modification was why the recipe lost a star in my rating).

    Forgot the sour cream and used ground chicken, but otherwise followed the recipe. Made it in a pie dish thought since tortillas are round. Came out well and quite tasty, you can definitely taste the cream cheese.

    Delicious!! I used salsa instead of enchilada sauce and left out the cumin because of allergies. My daughter said they were the best enchiladas she ever had. I’m making them for the 2nd time, but leaving out the chilis and added onion. I can’t wait to eat these!

    I used 1/2 corn and 1/2 flour for my casserole. The flour ones won! My entire family loved the casserole. Even the foster kittens- Dusty and Misty- wanted some ❤️
