I thought it was pretty good for my first time making empanadas. I used refrigerated pie crust and I thought the crust was dry out of the oven. Next time I'll try deep frying.

I used homemade pizza dough instead of empanada dough. Everyone loved it...will make again.

These were absolutely delicious I could not find empanada dough at the store and didn’t feel like making dough so I opted for the pie crust option. They were super easy to make as well. I was worried about the chicken being bland so I cooked my chicken in the instant pot with a jar of salsa. Then just took out the chicken and shredded it. I’m thinking next time I make these though I may add in some Mexican cheese in the mix.

Recipe makes exactly 10 - 6” empanadas. They are delicious! Sometimes I add a jalapeño for a little extra kick.

Turned out great. Made exactly as written and made homemade dough. Really tasty. Served with pico de Gallo. Made a little too much filling not much but had some left over.
