- vegetable oil (for shallow frying)

- 1 onion (small, halved)
- 1 carrot (small, halved)
- 1 stalk celery (halved)
- 1.4 kilograms chicken breasts (split, on the bone and fat trimmed)
- 1.4 liters chicken stock (homemade or low-sodium)
