- 1 Tbsp. oil
- 1 lb. boneless skinless chicken breasts (cut into 1/2-inch cubes)
- 1 pkg. chili seasoning mix (McCormick® Organics)
- 1 large sweet potato (cut into 1/2-inch chunks, about 2 cups)
- 14.5 oz. petite diced tomatoes (undrained)
- 1 1/2 cups chicken stock (Kitchen Basics® Organic Free-Range)
- 1 medium apple (cored and cut into 1-inch chunks)

Directions
- Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until lightly browned.
- Stir in remaining ingredients. Bring to boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally or until sweet potatoes are tender. Serve with desired toppings.

Good. We used apples on hand but Granny Smith would be better.We will probably make again but use less broth and possibly add some sausage
