- 14 oz. riced cauliflower
- 2 Tbsp. low sodium soy sauce (plus more for serving, optional)
- sesame oil (1 tbspn.)
- 1 boneless, skinless chicken breast (cooked, diced)
- hot sauce (for serving, optional)
- 8 cups water (boiled and kept on warm)
- 12 rice paper wrappers (spring roll)
- 2 oz. vermicelli rice noodles (follow cooking instructions on package)
- 1/2 cup shredded carrots
- 1/2 cup red cabbage (shredded)
- 1/2 avocado (sliced)
- 1 cucumber (small, julienned)
- 1/2 cup cilantro sprigs
- 24 mint leaves
- peanuts (crushed, for garnish, optional)
- 1/2 cup peanut dipping sauce (or low-sodium soy sauce for serving)
