    I would tweak this around next time I make it. First of all, it isn’t carnitas, it’s chicken not pork! Then it isn’t really shredded like carnitas does, it is more cubed/diced chicken. So I wouldn’t even call this chicken carnitas lol. My chicken can out pretty dry in the end. I would probably eliminate one of the citrus juices next round. The seasoning mix wasn’t bad, and the vegetables on top came out good - sort of like chicken fajita style. My suggestion is pick on citrus and stop cooking with some more liquid in the pan.
