- 1 onion (sliced)
- 4 cloves garlic (minced)
- 1 Tbsp. tomato paste
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 14 oz. crushed tomatoes (or diced)
- 1 cup white wine
- 2 carrots (cut into bite-sized pieces)
- 1 red bell pepper (cut into bite-sized pieces)
- 1 yellow bell pepper (cut into bite-sized pieces)
- 10 oz. cremini mushrooms (quartered, white mushrooms okay)
- 1 handful pitted kalamata olives
- 6 sprigs fresh thyme
- 1 cup chicken broth (see step 4)
- 1 handful chopped parsley

This was absolutely delicious (and easy)! I always leave the chicken to cook longer so that it falls off the bones.... it is now one of my “company’s coming” dishes. Thanks for sharing your recipe.

I left out the mushrooms and olives since my family are not fans of those 2 ingredients. I put over egg noodles and it was delicious.
