  • 3 tablespoons canola oil
  • 3 tablespoons hot sauce
  • 1 tablespoon sugar
  • 4 tablespoons red wine vinegar
  • 1 onion (peeled and diced)
  • 3 ounces peppers (pickled, sliced)
  • 1 2/3 pounds tomatoes (diced)
  • 4 chicken breasts
  • 1 avocado (ripe, peeled, halved, pitted and cut into wedges)
  • 4 ounces gouda cheese (coarsely grated)

    Directions

    1. Combine 1 tbsp oil, hot sauce, sugar, vinegar and 2 tbsp onion, 2 tbsp pepper and 2 tbsp tomato. Add chicken and marinate for at least 1 hour.
    2. Preheat broiler. Heat remaining oil in a frying pan and sear chicken breasts for 10 mins, turning as necessary. Place in a baking pan and top with avocado slices and grated cheese. Broil for 5 mins. Serve chicken with remaining tomatoes, peppers and onions.
