- 4 oz. pepper jack cheese slices (or shredded, you can use up to 6 oz)
- 1 cup frozen spinach (thawed and drained, or 1 pkg fresh spinach sauteed until wilted in 1 tbs oil)
- 1 Tbsp. olive oil
- 1 Tbsp. panko breadcrumbs
- sea salt (to taste)
- freshly ground black pepper (to taste)

Excellent! However, I did tweak a bit using your recipe for inspiration and guidance for technique, temp and cook time. I made my filling from fresh spinach and goat cheese with a bit of nutmeg. I used an 8 oz bag of fresh spinach and 4 oz of plain goat cheese. Creamy goodness! My chicken breast was huge and flattened to not quite 1/4”. I spread the filling on the flat breast and used silicone bands to secure the roll; topped with extra filling. Great idea to place in loaf pan. I lined mine with oiled foil for zero cleanup. My stuffed breast was extra large so I coooked a total of 50 minutes for a perfect 165 internal temp. My husband really liked the recipe and asked me to please save. I am famous for my “one off” meals! Thank you for an inspired recipe
