- 2 lb. chicken breast (marinaded, diced into 1/2 inch pieces, marinade recipe to follow)
- 2 Tbsp. ghee (or oil)
- 2 pieces canela
- 8 green cardamom pods
- 10 whole cloves
- 4 bay leafs (dried)
- 1/4 tsp. grated nutmeg
- 2 onions (large, sliced thinly)
- 10 cloves garlic (smashed and minced)
- 2 inches ginger (piece of, smashed and minced)
- 3 green chilies (or to your taste, I used Thai green chilies–peeled and de-seeded)
- 1/4 cup yogurt
- 5 Roma tomatoes (chopped)
- 3/4 cup mint leaves (chopped, plus more to garnish)
- 1/2 cup coriander leaves (chopped, cilantro)
- 3 1/2 cups basmati rice
- 1 pkg. Biryani spice mix (Shan, or make your own spice mixture)
- 2 Tbsp. golden raisins
- 2 Tbsp. cashew nuts (chopped)
- salt (to taste)
- 4 cups water (–to start. I think I used about 6 cups total.)

- 1/2 cup plain yogurt (whisked until creamy)
- 1/2 lemon
- olive oil (drizzle of)
- 1 Tbsp. Biryani spice mix (Shan)
- cracked pepper (freshly)
