- 2 qt. water (1.9L)
- 1 lb. okra (454g 1-inch slices, cut and frozen if fresh is not available)
- 1/2 cup water (240ml to cook the okra)
- 1/2 cup unsalted butter (114g)
- 1/2 cup all purpose flour
- 1 1/2 cups yellow onion (206g ¼ inch dice)
- 1 1/2 cups bell pepper (230g ¼ inch dice, green and red)
- 1/3 cup celery (55g ¼ inch dice)
- 2 cloves garlic (minced)
- 2 cups canned tomatoes (diced, 454g, 16 ounces)
- 12 oz. andouille sausage (340g cooked, sliced)
- 1 bay leaf (dried)
- 1 tsp. thyme (dried)
- 1 tsp. basil (dried)
- 1 tsp. cayenne pepper (or chili pepper, use less for lower spiciness)
- 1/2 tsp. black pepper
- 1 tsp. kosher salt
- 1 Tbsp. gumbo file (5g Zatarain's)

My family and I loved this. One star off because I think the flour mutes the spices a bit and it could be more flavorful.

Delicious. Used cornstarch instead of Gumbo file since I couldn’t find any at the store. Will make again. Family loved it.

Turned out really good! I did add more Cayenne pepper to spice it up a little more.
I made this to can for my husband to eat later while he’s away for work.

Turned out great! I didnt like the andouille sausage so next time I’ll substitute it with beef sausage. Prepped my onions and peppers the night before so it would cut down the time it took to make it. Definitely gonna be making this again, next time it’ll be spicy though!

Been using this recipe for more than a year now and it never disappoints. I add shrimp and I do not use the gumbo file or cayenne pepper. I use Tony’s as a base seasoning, I also add a little lemon juice and agave to give it more flavor but for any first timers this is the recipe for you!

Really good, used Tony Cs creole seasoning and Tony Cs roux mix in place of making a roux and using the gumbo file; only 1/4 tsp of cayenne and was still a tad hot for us. Next time we will omit cayenne as the there is enough spice in TCs and the andouille sausage for us

Banging gumbo. we had to modify the roux a little bit we used oil and flour and a lower temperature, also could not find gumbo file anywhere. but we followed everything pretty much to the T and added some tony chacheres. i have a friend that brings andoullie from New Orleans and ot gives it such an amazing smokey taste. will make again and brag about

Husband loved it. Didn't use file, only 1/2t of cayenne, 1/2 of of andouille because husband ate the rest 🥰. Rest as is.

I loved it! It had a really good flavor. I only used one can of the tomatoes and Cajun seasoning. It was a hit with my kids.

Very Good! I made it a day early and haven’t tasted it the second day. Before putting it in the fridge, I took more than my share of taste tests. With the amount of cayenne suggested, it’s pretty spicy. I like it, but perhaps next time, I’ll cut it a little for those spicy-intolerant folks. I also liked the idea of adding shrimp. This was my first attempt at gumbo, and I wasn’t disappointed.

It actually turned out pretty decent. I think once it sits over night and the juices and seasonings set it’ll be even better!

Super easy - the roux was cooked lower than recommended, and thus, took longer. I mixed both precooked chicken along with grilled chicken strips. I didn't use the file, and it still turned out phenomenal.
