- 1 red onion (peeled and finely sliced)
- 2 tomatoes (seeds removed, flesh finely chopped)
- 1 Tbsp. tomato purée
- water (splash)
- 75 mL double cream (/2½fl oz)
- 150 grams baby spinach leaves
- 1 handful coriander leaves (fresh, chopped)
- 100 grams basmati rice (/3½oz, rinsed and drained, then cooked according to packet)
