I’d say that the chicken and brussels were a hit! I livened the recipe up a bit by adding diagonal sliced carrots, a bit of sliced red onion and wrapped the chicken in bacon😃! While the boys of the family enjoyed the meal with a side if smashed red potatoes, my daughter and I topped a dinner-size salad off with the Brussels and a smidge of chicken - over-all a simple dish with great potential and adaptability👍!
