- 2 sausages, chopped (chopped)
- 100 grams chihuahua cheese (cubed, may substitute a mild cheddar or colby)
- 6 leaves romaine lettuce (torn into bite-sized pieces)
- 1 tomato (diced)
- 1/4 red onion (cut into thin half moons)
- 1/2 pickles (sliced)
- 2 Tbsp. pickle brine
- 1 tsp. white vinegar
- 2 Tbsp. mustard
- 2 Tbsp. olive oil
- salt and ground black pepper

Directions
- Fry the sausage until golden brown. Remove from pan and blot to remove excess grease.
- Mix the lettuce, tomato, onion, and pickles together in a salad bowl. Stir in the sausage.
- Whisk together the pickle brine, vinegar, mustard, olive oil, salt, and pepper in a separate bowl. Drizzle over the salad and stir to coat.
- Serve, sprinkling with cheese.
