These were the clear winner of all the baking I gave away at Christmas. Terrific and delicious macaroon treats that led to some great comments from friends and family. I did have a variety between batches, though, as I tripled the recipe and had to split baking across 2 days (don't start baking late at night). Piping them from a Ziploc bag with a snipped corner, the first batch baked quite thin and while it did have a chewy center the overall look and feel led to more of a meringue than a macaroon. The rest of the mixture was refrigerated overnight which meant piping from the bag was difficult so spooning the chilled mixture led to irregular sizes and shapes but the macaroons were thicker, chewier and lost their meringue-like crispiness.
