Ingredients

- 8 slices baguette (sliced on an angle)
- olive oil
- sea salt
- pepper
- 2 garlic cloves
- 1 tsp. champagne vinegar
- 1/4 tsp. sea salt
- 1 Tbsp. honey (plus more for garnish)
- 2 Tbsp. olive oil
- fresh cracked pepper (to taste, optional)
- 1/2 pt. grape tomatoes (diced)
- 1 green onion (thinly sliced)
- 1 tsp. fresh oregano (minced)
- 1 Tbsp. fresh basil (thinly sliced)
- 1 Tbsp. freshly grated Parmesan
- flaked sea salt (optional)

Directions
- Place the bread slices on a sheet tray and drizzle both sides lightly with olive oil. Sprinkle one side with salt & pepper and broil on low until lightly toasted. Flip the toast and broil again until golden. Cut one garlic clove in half and gently rub the cut side of the clove half on each slice of toast while the toast is still warm. Set aside.
- In a small bowl combine the vinegar and salt and whisk to dissolve. Add the honey, olive oil and pepper and whisk again until combined. Set aside.
- Mince one garlic clove and add to a medium bowl along with the tomatoes, green onion, oregano and basil. Stir to combine. Add the dressing and mix well.
- Place a spoonful of the tomato mixture on top of each slice of toast, dividing evenly. Sprinkle with parmesan and sea salt if using. Finish with a drizzle of honey and serve immediately.
