Description
A frittata is a great way to get a healthy breakfast in with just a little bit of effort. Eggs provide a good dose of protein, while fresh cherry tomatoes add a healthy serving of vegetables. Mozzarella cheese adds a bit of creaminess while a sprinkling of chive adds a fresh and earthy flavor. This recipe is a great way to use tomatoes and fresh herbs in the summer and you can swap the chives out for other herbs like basil for a whole different flavor profile.

- 50 grams mozzarella cheese (grated)
- 1 cup tomato
- 2 garlic cloves
- 1 bunch fresh chives
- salt (to taste)
- pepper (to taste)
- 1 Tbsp. olive oil

Directions
- Preheat oven to 180 degrees Celsius.
- Heat the olive oil in an oven-proof nonstick frying pan.
- Add the whole garlic cloves and let them fry a little over a low heat, until they release their aroma.
