- 75 grams glacé cherries
- 500 grams golden caster sugar

- 1/2 tsp. almond extract (good quality, I always use Neilsen Massey)
- 1/4 tsp. fine sea salt
- 2 baking powder (level teaspoons of)
- 300 mL whole milk
- 75 grams ground almonds
- 2 Tbsp. flaked almonds
- 200 grams icing sugar
- 2 Tbsp. amaretto (or water, see note below)
