- 6 garlic cloves (crushed)
- 2 jalapeños (seeds removed, optional, depending on how much spice you like)
- 12 oz. beer (dark is preferable)
- 1/4 cup lime juice
- 1/4 cup coconut oil
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. maple syrup
- 1/4 cup parsley leaves (picked, rough chop)
- 1 Tbsp. thyme leaves (picked)
- 2 Tbsp. smoked paprika
- 2 tsp. allspice
- 1 tsp. coriander
- 1 tsp. ginger
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 whole chicken (organic, free-range, locally grown, if available, cut up, breast cut in 2 across breast, or 8 favorite bone-in chicken pieces)
- 1 yellow onion

Directions
- Blend all ingredients in blender.
- Take 1/2 of marinade and pour over chicken parts, mix well and refrigerate for 2-3 hours or overnight.
- Reserve remainder of marinade.
