- 6 oz. tomato paste
- 1 1/2 cups water
- 8 oz. extra sharp cheddar (shredded)
- 1 Tbsp. corn starch
- 12 oz. evaporated milk
- 1/2 tsp. smoked paprika
- 2 tsp. hot sauce (your favorite)
- 1 pinch salt
- 1 lb. corn tortilla chips (unsalted, restaurant style)
- 2 cups Monterey Jack (shredded)
- 1 can black bean (drained and rinsed)
- 4 jalapenos (fresh, and/or red fresno chiles, finely chopped, ribs and seeds removed if you prefer)
- tomatoes (chopped seeded)
- scallions (chopped)
- sour cream
- guacamole
