- 11 oz. black beans (rinsed and drained)
- 4 oz. green chilies (undrained)
- 1 lb. boneless skinless chicken breasts (, thinly sliced)
- 1 cup Monterey Jack

Directions
- Prepare Knorr® Rice Sides™ - Chicken flavor according to package directions. Stir in corn, beans and chilies.
- Meanwhile, heat 1 tablespoon vegetable oil in large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes.
- Arrange Rice mixture on serving platter, then top with chicken and cheese.

I use Mexican rice and a Mexican blend of cheese. My husband and son love it!

Recipe doesn't call for flavoring chicken. Turns out with very little flavor if you cook it that way.

Love this recipe for a quick but hardy meal. I have made it numerous times and my husband loves it. I do add a can of diced chiles to it to give it a kick. Instead of placing the chicken on top, I dice the chicken and make it a one dish meal.
