My autistic 8-yr-old loved making this, and the whole house loved eating it! I couldn't find the grater attachment to my Food Ninja blender/food processor, so I used the linguine spiralizer one. Very yummy and everyone's already asking me to make it again!

Wow! Really loved this. Used a mix of cheeses (Brie, Moz and Ceddar) and added cut cherry tomatoes that really livened it up. Will make again and it's hugely adaptable as others have noted.

It was good. I thought it might be watery, but wasn't. Great way to use up zucchini.

It was so yummy. Only thing is my topping didn’t look like this. It was cooked. But still turned out yummy

This is the first time I had rice, in cooking for 50 years, that was light, fluffy, and had separated grains!!!! The casserole was very tasty and I have made it several times now with different spice blends instead of the Mrs Dash. Sometimes I put a chopped and seeded jalapeño in for a little kick and use cumin and cilantro. This recipe is so versatile! Everyone from 8-84 yrs old in our family loves it! Great during Lent also!!
