Break the baguette into chunks and pulse into coarse crumbs with a food processor.

In a large mixing bowl, combine baguette breadcrumbs, Parmesan, parsley, thyme, salt, and black pepper. Set aside.

Mince the garlic.

Heat the olive oil in a large sauté pan. Once the oil is shimmering, add the shallot. Cook until the shallot is softened, 5-6 minutes. Add the garlic to the pan, and cook for a minute longer, until fragrant.

Add the cooked shallots and garlic to the bowl of breadcrumbs.

Grate the cheese into a separate bowl.

Add half the grated cheese to the breadcrumb mixture. Crack the eggs into the bowl of breadcrumbs and cheese. Mix vigorously until the stuffing holds together when pinched.

With a small spoon and clean hands, stuff a generous tablespoon of filling into each mushroom. Use enough so that the mushrooms are tightly packed and domed with stuffing. Top each mushroom with a heaping teaspoon of the reserved shredded cheese.

Bake the mushrooms on middle rack of oven until cheese is bubbly and golden brown, 25-28 minutes.
