- 10 oz. russet potato (peeled and chopped)
- 1 medium carrot (chopped)
- 1 1/2 cups soy milk (unflavored)
- 1 cup raw cashews (soaked in water 4-8 hours and drained)
- 1/4 cup nutritional yeast flakes
- 1/4 cup vinegar (based hot sauce I used Cholula)
- 3 Tbsp. white miso paste
- 1 Tbsp. red wine vinegar
- 1 garlic clove
- 1/2 tsp. salt (plus more to taste)
- 2 lb. russet potatoes (3 medium, peeled and finely diced, 1/2 inch or smaller)
- 1 onion (medium, diced)
