    To be honest I only partially followed the recipe because I wanted to use ingredients I had on hand. We cut the squash in half, scooped out the seeds and dug a half channel until about 1/2-3/4” of the way to the end. Placed face down in a pan with water, minced garlic, and better than bullion veggie broth and covered. Cooked per instructions. Scrambled two duck eggs with pepper and onion mix and seasoning, cooked a package of Spanish rice adding some of my own seasoning, above broth, black beans, and at the end added a touch of cashew milk, some sour cream and shredded Kraft Mexican cheese. Added eggs, stirred together, let it sit and the squash was so tender at the 40 min mark we decided to just fill it and eat! Delicious!!! If you try it this way, season to taste and remember to add a bit of sweetness-it goes well with squash!

    it was delish the family all really enjoyed it. i used medium cheese whichbi think sharp would have been way better. i also didnt have fresh chives or i would have used them. i would say for just making out off the things i had on hand pretty good.

    Quite easy to make. We added bacon crumbles, which was good, but was pretty bold among the other muted flavors. We will probably make this again.

    Amazing. Definitely would make again. My 2 year old an her father enjoyed. I added bacon bits for extra flavor.
