- 1/4 cup sour cream (plus more for serving)
- 4 corn tortillas (torn into quarters)
- 2 1/2 lb. rotisserie chicken (skin and bones removed, meat shredded, about 4 cups shredded chicken)
- 15 oz. black beans (rinsed and drained)
- 3 oz. shredded cheese (such as a Mexican cheese blend, Monterey Jack, or mozzarella, about 3/4 cup)

This recipe turned out really well. My husband loved it. I made my own enchilada sauce so that was somewhat time consuming but I think worth the time. I also thought that corn would be good in this, but I didn’t have any. I will definitely make this again

Very good. Easy to experiment with. We use 5 cloves of garlic and 8 tortillas. We also bakednin jalepenos.
