Oh my gosh, this was really good!!!! I do not say that about a lot of recipes. I used Trader Joe's roasted frozen corn instead of the ears. All I can say that it was easy and tasty. I also liked the coconut flavor and it enhanced rather than overwhelmed the overall flavor.
