- 1 tsp. mustard (country)
- 2 tsp. kosher salt
- 1 cup yellow cornmeal (fine or medium, I use a polenta style cornmeal)
- 1 Tbsp. unsalted butter
- 1 Tbsp. extra-virgin olive oil
- 1/2 yellow onion (sweet, about 1 cup, diced)
- 1 red pepper (diced)
- 1 orange pepper (diced)
- 1 poblano pepper (diced)
- 1/4 cup chevre (I use Redwood Hill Farm's Roasted Chile Chevre)
- 1/4 cup ricotta cheese
- 1/4 cup grated Parmesan cheese (finely)
- 2 bunches Swiss chard
- 1 1/3 cups marinara sauce (your favorite, I use Trader Joe's Organic Tomato Basil Marinara)
- 3 oz. fontina cheese (sliced)
