- 1/2 tsp. garlic powder
- 1/2 tsp. paprika

- pepper
- 1/2 cup tomato sauce (plain, or enchilada sauce)
- 1 tsp. olive oil
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1 cup grated cheese (I used cheddar and Pepper Jack)
- chopped green onion
- diced tomatoes
- jalapeños (chopped or sliced)
- sour cream
- Greek yogurt
- fresh cilantro
- pico de gallo

- tortilla chips (crushed)

Accurate recipe and delicious I love that it’s low carb and gluten free I actually feel I’m eating something that is healthy but rich in taste

This was so yummy! My daughter (6) literally went and found a sticker that said “You Rock” from her stocker box and put it on my shirt because it was “the best dinner ever!!” Need I say more?

this was great. I substituted chickpeas for the meat and made my own enchilada sauce because I think it tasted a lot better that way. I think it would taste just as good with the meat, I just like to make at least one vegetarian recipe a week and it's easier to throw a can of chickpeas and then it is to cook meat.
