- 2 Tbsp. white wine (or vegetable broth)
- 4 oz. fresh goat cheese (crumbled, about 1 cup)
- 2 oz. gruyère cheese (grated, plus 2 more ounces for the tops, about 1 cup total)
- pumpkin seeds (toasted, for garnish, optional)
- 2 cups kale leaves (lightly packed, torn, no stems)
- 2 Tbsp. pine nuts
- 1 large garlic clove
- 1/4 cup grated Parmesan
- 1/3 cup extra virgin olive oil
- lemon juice (a squeeze of)
