turned out delicious! kids loved them, great way to use up leftovers, i mixed in chopped up corned beef and you can add any other vegetables too.

My son asks me to make extra mashed potatoes just so I can make these the next day.

This was a tasty way to use leftovers. Mine stuck to the muffin pan even with greasing. Maybe a silicone pan would work better.
