I loved the flavor blend of this recipe. I used regular canned tomatoes and added some fresh onion, pepper and parsley from the garden to make up the flavor. The carb eaters had it over rice and it was devoured.
For a shortcut, I fried everything in a cast iron pan, put the topping on and put in oven.
