I used cream of mushroom soup and 5oz havarti cheese and 8oz cheddar. It was great. The reason for the substitutions is because it's what I had in the frige. Thank you for this recipe.

Easy and delish!! Will make again! Just as great as Cracker Barrel and not only that....my picky husband gave it the ok!

I brought this to work and it was gone before I knew it! I have made this a few times and made a couple of changes. I found the the onion to be too overpowering so I cooked the onion in a pan for a few minutes before adding to the mixture. Another time I skipped the onion and used cream of onion soup (omg soooo good) instead of cream of chicken soup. I use whatever cheese is in my fridge (whether it's 5 cheese mexican, cheddar, or colby jack), it's all good! TIP: get the hashbrowns to room temp before putting in the oven so it will cook faster. I usually thaw a frozen bag in the fridge overnight and then use the microwave on a low power setting before adding them to the recipe.
